Sesame Noodle Salad

Sesame Noodle Salad

Creamy, nutty, and full of vegetables this fresh noodle dish is great as a chilled main course or saucy side dish.

Serves: 6-8


Ingredients

  • 2 cups cooked broccoli (steamed or blanched)

  • 1 cup cooked peas (defrosted frozen peas are ok too)

  • 1 cup cucumber sliced ¼” and cut into quarters

  • ¼ cup thinly sliced scallion

  • ¼ toasted sesame seeds

  • 1 tsp fine sea salt                                                                                    

  • 1 pound fresh lo mein noodles, cooked to package directions (see Recipe Notes) and chilled in running water.

    Sesame Dressing: whisk until smooth

  • ½ cup tahini

  • 2 Tbsp soy sauce or gluten free tamari

  • ¼ cup mirin (or sake, or xiaoxing wine)

  • 2 Tbsp sugar

  • 2 Tbsp miso

  • ½ tsp fine sea salt

  • 2 Tbsp toasted sesamed seeds

  • 2 Tbsp white vinegar

  • ½ cup water

Directions

  1. In a large mixing bowl, toss the noodles and vegetables with the sesame dressing and enjoy right away.  Try to dress the noodles right before serving.

  2. Enjoy!

Recipe Notes

Fresh lo mein noodles can be found at the local grocery store or Asian market. If you need to substitute with your favorite noodles or gluten free noodles go for it!

If the noodles seem sticky and hard to mix, add a few tablespoons of water to loosen up the noodle salad.
