Marguerite Cocktail

by: Christian Leue

Balanced, tart, and refreshing, the Marguerite cocktail uses Terra gin, produced by Cardinal Spirits using a custom botanical blend created by La Boîte that includes zuta mint and cubeb berries. The Daisy blend from The Spice Companion creates a rich spiced syrup, a perfect foil for fresh lemon and our distinctive gin.

Scant 3/4 teaspoon/2 grams ground sumac

Marguerite Cocktail – for 1 cocktail
2 ounces Terra gin*
1 ounce fresh lemon juice
1/2 ounce Daisy syrup (see above)
seltzer water
suggested garnish: mint sprig and small daisy flower

Directions

1. Combine the spirit, juice and syrup with ice in a shaker. Shake and strain into a Julep cup or small tumbler filled with cracked ice. Top with seltzer and garnish. Serve with straw.

*Terra gin is currently available in Indiana and in New York State. If you can’t find it locally try substituting: a non-traditional gin like Botanivore from St. George, a low juniper variety like Citadelle, or for a twist, a resinous Spanish gin like Xoriguer from Mahon.

Variants & Ideas:

• Make it a flip. Add 1 whole pasteurized egg or 3 tablespoons of aquafaba to the shaker along with 2 dashes of bitters (try celery) and another teaspoon of Daisy syrup, shake until well chilled, then strain into a chilled tumbler glass.
