An Egg-cellent Way to Taste Egg… Without the Egg!

Are you vegan and missing your breakfast eggs? Maybe you miss eating shakshuka, sunny side up, poached, fried, and scrambled eggs…Or perhaps you simply avoid giving your kids sunny-side-up eggs because of health risks. If so, there’s no need to avoid eggs – you only need to know about YO-Egg!

Israeli startup YO-Egg has developed an alternative egg substitute that looks like eggs but is 100% vegan. Now, it’s not the first eggless egg, but what is impressive here is how it looks exactly like a sunny-side-up egg! It’s an eggcellent egg double. YO-Egg claims that their eggless egg has an identical nutritional value – and as a bonus, it’s also a cholesterol-free alternative. Through creative technology, they have mastered the look of the yolk and whites through a smart molecular process and by using ingredients with a nutritional punch similar to eggs.

YO-Egg has received a grant of 100,000 Shekels from the IIA (Israel Innovation Authority) in order to develop their sunny-side-up prototype. The rest, they are funding themselves.

YO-Egg founder Yosefa Ben Cohen was selected as a finalist in the 2021 AgriFood Women’s Entrepreneurship Competition for her alternative egg innovation. She explains, “As a vegan for  10 years and a plant-based chef, while I was working on one of my projects I understood that there is no good solution for plant-based eggs that gives the same experience and optimal nutritional value. At that moment we decided to take the challenge and develop the perfect plant-based eggs”.
